Jose luis is beyond talented in the kitchen and in creating a dining experience never to be forgotten. each course- from the mezcal with fig foam cocktail, to the jicama and huitlacoche sandwich, to the basil cream with hibiscus syrup dessert -- had me thinking there was nothing better i'd ever tasted. while there were several ingredients included in the 7 course meal that i usually don't like, i was pleasantly surprised and loved them all. the chef truly knows how to layer flavors and textures in a way that will have you excited until the last bite. this is an experience not to be missed and i've eaten in the best restaraunts in oaxaca and new york.
