A meal to remember!

We certainly disagree with the last reviewer. i guess you can't please everyone, but now knowing he has been into cooking for no more than two years makes us appretiate his cooking skills a lot more. what we were served is what i could could call a 9 course smart menu, so simple yet so fantastic.
lady michelle, heston blumenthal and ferran adria did not go to school and do you know who they are? (we are not comparing but this kid has barely started)
we highly recommend it as the best restaurant in oaxaca and some of the future best chefs in mexico there is no doubt about it!

This is not a real restaurant, it is an egoist's exercise in ambition and arrogance. the young chef has only been "into food" for a year and a half and is entirely self-trained. his ambition far overreaches his abilities. he has a pulverizer and a foamer and some imagination, but no palate--his flavor combinations are often ghastly. ceviche (barely brined grouper) with a sweet passion fruit syrup? coffee bean encrusted steak with banana sauce? (call it steak ala starbucks) the meal made me appreciate all the chefs who endure hard, humble apprenticeships in order to create authentic culinary pleasure. this chef wants to tango before he's learned to walk. the result is embarrassing for him, and a swindle for his customers. the two young servers set down plates and filled waters but had no clue about how to help create a pleasing, high end dining experience.
