Okay, we refuse, simply refuse, to get into the debate about Texas vs. Kansas City vs. Mississippi barbecue (and if you've got another place with the best dang barbecue, we really don't want to hear about it). But we can say that if you aren't physically in those places, you gotta take what you can get -- and luckily for Vegas visitors, eating at Memphis Championship Barbecue is hardly settling. Its vinegar-based sauce is sweet but has a kick. Food is cooked over mesquite applewood, and the meat falls off the bone just the way you want it to. They have hot links, baked beans, everything you would want and hope for. Standouts include a pulled-barbecue-chicken sandwich, onion straws, and delicious mac and cheese. Note this special: A $60 feast includes a rack of St. Louis ribs, 1/2 pound of pork, 1/2 pound of beef brisket, 1/2 pound of hot links, a whole chicken, baked beans, coleslaw, rolls, cream corn, and fries. It feeds four; we think even if two of those four are teenage boys, you might have leftovers.
