Mexico says hola to master chef Jean-Georges Vongerichten, whose latest culinary venture, Market, opened this month at the luxurious One&Only Resort Palmilla in San Jose Del Cabo, Mexico.
Replacing a more formal restaurant run by Chicago-based chef Charlie Trotter, Market features the same ultra-stylish and imaginative fare as other Vongerichten eateries, such as Jean-Georges (three Michelin stars) in New York City.
Bien sur, there’s a Gallic touch, stemming from the chef’s Alsatian French upbringing, crossed with accents from the Far East, where Vongerichten opened acclaimed restaurants in Hong Kong, Singapore and Bangkok. To these the chef has added Mexican twists at Market in Cabo, as in the corn ravioli, marinated cherry tomatoes and basil fondue appetizer and the roasted veal chop with chipotle glaze entrée.
The resort also just debuted Suviche, a Jean-Georges raw-fish bar featuring Japanese sushi and Mexican ceviche, and 13 new beachfront casitas, each with its own private infinity pool.
