Élan Resort & Spa, Boulevard Kukulcan K.M. 3.5 Esq. Galleon, Cancún, Mexico, (888) 400-3526: The style is Mexican Colonial — and sprawling — at this all-inclusive resort that has reopened after renovations following Hurricane Wilma in 2005. The resort, overlooking Nichupté Lagoon in Cancún, has 95 rooms and 51 villa suites, six restaurants and a spa. Rates include meals, drinks, water-sports equipment and more. Doubles start at $300 per night; one-bedroom villas at $450.

This is a city known for great old architecture. And it's a desert spot and has a long-standing tradition of hospitality.
